Cheesy Fruit Salad & Banana

HELO



mix any fruit you like with thick cream, milk, and condense milk, adjust until you are happy with the taste :D add cheesy on top
i used Kraft Cheddar Cheese.

and here are my caramelized banana, unsalted butter and brown sugar, add cheese + sprinkle choco
you can find this easly back in Indonesia...im home sickkkk :(

Egg Benedict + Salmon

 Egg Benedict for lunch....

I made my own hollandaise sauce, easier than I thought , no more paying $25 for an egg benedict

Egg Benedict
from Jamie Oliver recipes

Ingredients
2 eggs
2 rashers of bacon - change to Salmon *slightly pan fry
1 muffin, halved - I used bagel bread
salt and ground black pepper

FOR THE HOLLANDAISE SAUCE
2 egg yolks
2 tbsp white wine vinegar - I use apple vinegar
5-6 black peppercorns
125g clarified butter
lemon juice, to taste
salt and ground black pepper

Method
SERVES 2

1. To make the hollandaise sauce, place the 2 tbsp of white wine vinegar, along with the black peppercorns, into a small saucepan and reduce the vinegar by half and then strain. Heat the clarified butter in a saucepan. Put the egg yolks into a bowl suspended over a saucepan of simmering water and add the reduced vinegar. Whisk vigorously until the mixture forms a light, airy foam. Gradually add the clarified butter a little at a time to the egg mixture, whisking all the time to form an emulsion. Season with salt, pepper and lemon juice. Keep warm.
2. Poach the eggs for 2-3 minutes. Grill the bacon rashers * pan fry salmon * and toast the muffin halves.
3. To serve, place the bacon on top of the muffin halves, followed by the poached egg. Season with salt and pepper and then pour over the sauce.

Churros

happy weekend everyone ....
even tho I have no one and nothing to do , still TGIF !!

here some churros I made to brighten up my weekend


Churros are often referred to as Spanish doughnuts.

1 cup water
3 tbsp. butter, diced
2 tbsp. brown sugar
Pinch of salt
1 1/8 cups all-purpose flour
1 tsp. ground cinnamon, plus more for dusting
1 tsp. vanilla extract
2 medium eggs
Vegetable oil, for frying
Confectioners’ or superfine sugar, for dusting

-Heat the water, butter, brown sugar, and salt in a saucepan over medium heat until the butter has melted.
-Add the flour all at once, cinnamon, and vanilla extract. Remove the pan from the heat and beat rapidly until the mixture pulls away from the side of the pan.
-Let cool slightly, then beat in the eggs, one at a time, beating well after each addition, until the mixture is thick and smooth. Spoon the mixture into a pastry bag fitted with a wide star tip.
-Heat the oil in a deep frying pan. Pipe 5″ lengths of the dough into the oil. Deep fry for 2 minutes on each side or until golden brown. Remove with a slotted spoon and drain on paper towels.
-Dust the churros with confectioners’ sugar and a light topping of cinnamon.
-Serves 12

Dorayaki

DORAYAKI/ JAPANESE RED BEAN PANCAKE

Ingredients:
  • 4 eggs
  • 140g (2/3 cup) sugar
  • 2 Tbsp. honey
  • 160g (1 cup) all-purpose flour
  • 1 tsp. baking powder
  • 1-2 Tbsp. water
  • 1 can Ogura-An (sweetened red bean paste)
Instructions:
  1. In a large bowl, combine eggs, sugar, and honey and whisk well until the mixture gets fluffy.
  2. Sift flour and baking powder into the bowl and mix. Keep in the fridge to rest for 15 minutes.
  3. Stir in ½ Tbsp of water at a time to get the right consistency. It should be a little bit thicker than pancake batter. If the batter is too thin, Dorayaki buns will be too flat and not fluffy.
  4. Heat a large non-stick frying pan on medium-low to medium heat. Dip the paper towel in oil and coat the bottom of the pan with the oil. The pan should be slightly oiled but shouldn’t be visible. That’s the secret to get nice texture on the surface of Dorayaki. With a ladle, drop the batter from 1 foot above the pan to create 3 inch diameter “pancake”. When you see the surface of batter starts to bubble, flip over and cook the other side. Transfer to a plate and cover up with damp towel to prevent from drying. Continue making pancakes.
  5. Make sandwich with red bean paste. Put more red bean paste in the center so the shape of Dorayaki will be curved (middle part should be higher). Quickly wrap them with saran wrap until you ready to serve.

Potato Doughnut

Donat Kentang

gone in a blink.....
sprinkle with cinnamon powder
here what you need.....recipe taken from NCC indonesia

Bahan:500 gr   tepung terigu protein tinggi
50 gr     susu bubuk
11 gr     ragi instant
200 gr   kentang, kukus, haluskan dan dinginkan
100 gr   gula psir
75 gr     mentega
½ sdt    garam
4 btr      kuning telur
100 ml   air dingin
Cara membuatnya:
  1. Dalam wadah, campur tepung terigu, gula, susu bubuk, ragi instant, aduk rata, masukkan kentang halus ,tuang telur dan air dingin, uleni hingga rata dan setengah kalis.
  2. Beri mentega dan garam, uleni terus hingga kalis elastis. Istirahatkan 15 menit.
  3. Bagi adonan, masing-masing 50 gr, bulatkan. Diamkan 20 menit, hingga mengembang.
  4. Lubangi tengahnya, menjadi bentuk donat, segera goreng sampai kuning kecoklatan.
  5. Angkat, tiriskan. Taburi gula donat, atau hias dengan coklat.

Owl Cupcake

Hi....finally a new post :) find the time and mood to write edit and publish this...
here an owl cupcake that I made for my new born nephew baby Philbert , he finally in the houseeeee...*yay
was giving this all cupcake to all friends and family who come and visit him :)
happy 1 month baby Phill kuku love you....


it was a real test to make all 80 in total..=.=" but I DIDDD ITTTT WOOHO

Milo Doggie Cookies

Hiii....everyone...

how is your Good Friday going?
Happy Easter for those who celebrate....




Ingredients:
(makes about 48 cookies) I did bigger dog shape so i only made half about 20ish

180g butter, soften at room temperature
80g Milo (original flavour)
200g top flour or cake flour
25g corn flour
25g milk powder
100g chocolate chips
some chocolate rice - I use choc chip cut into half for mydog eyes
some Koko Krunch/MILO

Method:
  1. Pre-heat oven to 140deg C. Line baking tray with baking paper and set aside.
  2. Sieve top flour, corn flour and milk powder.
  3. Cream butter and Horlicks for about three minutes at low speed. Do not overbeat.
  4. Put in top flour, cornflour and milk powder and beat for about one minute to form dough.
  5. Divide dough into 10g each. Put three chocolate chips into each piece of dough and roll into balls.
  6. Insert two pieces of Koko Krunch to form the 'ears', chocolate rice for the "eyes", and a chocolate chip in the centre for the 'nose'.
  7. Bake at 140 deg C for about 25 minutes. Depending on your oven, it may take another 5 to 10 minutes more for the cookies to be ready.
  8. Leave to cool on wire rack before storing in an airtight container.

Chicken with creamy mushroom


Honey Chicken Deep fried with breadcrumb + steam veg + creamy mush sauce








bruschetta

here what you need:

Chicken and Mushroom Sauce

Chicken breast - marinade with Honey and Dijon Mustard
Breadcrumb 
Eggs
Oil to Deep Fry

* marinade chicken for 30 min then layer with egg and breadcrumb, deep fried in small heat until it cook and golden brown

Mushroom Sauce

Mushroom - chop 
tick Cream
milk
brown onion
garlic 
salt/pepper/sugar

* saute garlic and brown onion add mushroom add cream and milk , taste with salt pepper sugar and cook until cream thickened




Bruschetta

I use the premade garlic bread that you can buy in Coles / Woolies , pan fry without oil until its brown a little/ or oven whatever suit you, before serve add the salsa.

*To make my easy version salsa :D I used Tomato chop finely and red Onion chop too, mixed with balsamic vinegar, add pepper and herbs ( I used parsley )

 Curly Fries. this too are a frozen packed :D add ketchup and there you have a very nice meal...

Peking Pork Chop

 today I cooked one of my favorites dish PEKING SPARE RIBS.....

Peking Pork Chops Recipe (Jing Du Pork/京都排骨)
Ingredients:
1 lb pork tenderloin or pork spare ribs, cut into 1/2-inch thick slices
Oil for deep frying
1 teaspoon toasted sesame seeds, optional
Marinade:
1 egg
1 tablespoon cornstarch
1/2 teaspoon Shaoxing wine
1/2 teaspoon salt
Sauce:
1 1/2 tablespoons tomato ketchup
1/2 tablespoon plum sauce
1/2 tablespoon chili sauce
1/4 teaspoon sweet bean sauce, or Hoisin sauce
1 tablespoon Worcestershire sauce
1 1/2 tablespoons black vinegar
1 1/2 tablespoons sugar
small pinch of Chinese Five Spice powder, optional
2 tablespoons water
Method:
1. Pound pork slices with mallet, or with the back of a kitchen knife until tender. Set aside. In a bowl, mix the Marinade ingredients, add in pork slices, mix well, and marinade for 30 minutes.
2. In a separate bowl, mix the Sauce ingredients. You may add more or less sugar, or other sauce ingredients to your own liking. Set sauce mixture aside.
3. Heat up a wok with enough oil, deep-fry pork slices for 5 minutes, or until color changes to golden brown and slightly crispy. Dish up, drain with paper towels and set aside.
4. Bring sauce to a quick boil, add deep-fried pork, and stir until all the meat is well coated with sauce. Dish up and sprinkle the pork chops with some toasted sesame seeds. Serve over a bowl of hot steamed rice.

Perkedel / Potato Patties


Perkedel is an Indonesian potato patties.The word perkedel was from Dutch "frikadel"  it made from potato mash with corn beef, sweet corn and spring onion...everyone will do differently but those ingredient was how my mum always made, and I lovee it so much...despite the time consuming on making it...
it took you 2 sec to love the 1st bite and 2 hours to made them haha..eniwey
in Indonesia , perkedel will be a great companion to Yellow rice / Nasi Kuning. we ate them with other dish too..or even as a snack on its own ...

My Mum always made this in medium size...but I love to make the mini version

Perkedel Kentang

Ingredient

Potato - chop into small pieces
corned beef
sweet corn
spring onion
salt/pepper/sugar
eggs
oil to fry

The most important trick to make these perkedel is to fry your potato 1st...use small heat to avoid burn the potato. this need patient :D then mash your fried potato then mix with everything else (corned beef, spring onion & corn). I usually will let the potato cool down for 1 hour or so , add egg once your mixture cool down

Shape your mixture into round or oval shape ..coat them with egg white then deep fry in hot oil until golden brown each side

let it cool before served :)

take a lot of time but worth to try

Tomato Soup

Red Soup


 Ingredient:

Tomato sauce
Butter / margarine
salt/pepper/sugar
chicken stock (block)
garlic
brown onion

you can use anything for the filling , I used chicken fillet, frozen Veg & sausage.

cook garlic and onion with butter/margarine until brown,  then your filling ( chicken, sausage ) mix well until half cook, mix with frozen veg. add lots of water + tomato sauce ( LOTSS of it) and everything else. cooked until boil and taste it to your desire. :D easyyy righttt...

Fermented cassava Cake

Kue Tape Keju or Cassava Cake. for those who doesn't know what cassava is or we called  "tape" in Indonesia...

Cassava or "Tape" is 

A hardy plant grown in many tropical countries.It’s eaten in a variety of ways ranging from flour to vegetable dishes. Tapioca pearls, which come from cassava, are used in desserts.

recipe from here 

so here what you need:

300 g Tape - cassava
75 ml susu kental manis --50 ml - condensed milk
5 telur ayam  - egg
200 gr gula pasir halus --180 gr - sugar
1/8 sdt vanili bubuk --1/4 sdt - vanilla
150 gr mentega, lelehkan --100 gr butter+50 gr margarine - butter / margarine
100 gr keju cheddar parut - cheddar cheese
175 gr tepung terigu - plain flour
1/2 sdt baking powder --1 sdt - baking powder

orange is what I used

1. Siapkan loyang bundar 20 cm berlubang tengah. Semir mentega, taburi sedikit terigu.
2. Haluskan peuyeum dengan garpu, campurkan dengan susu kental manis. Aduk rata, sisihkan.
3. Kocok telur dan gula hingga gula larut dan kental. (pake mixer berkecepatan tinggi ya)
4. Tambahkan vanili, kocok rata. Masukkan campuran peuyeum halus sedikit2 sambil kocok hingga rata.
5. Tuang mentega leleh, aduk rata.
6. Tambahkan campuran tepung terigu dan 50 gram keju cheddar, aduk rata.
7. Tuang ke dalam loyang dan panggang dalam oven panas bersuhu 160 C (sy pake 180 C) selama 45 menit hingga matang. (u/ cupcake wkt-nya lebih pendek)
8. Angkat, dinginkan. Potong2 dan sajikan.


Generously butter a tube pan and dust with a little flour.
Puree the fermented cassava with a fork, mix the sweetened condensed milk. 
Mix well and set aside.

Beat eggs and sugar until sugar is dissolved and condensed. 
 Add vanilla, beat well. (*set the mixer in high-speed).
Gradually add the fermented cassava mix while beating until blended,
Pour the melted butter and stir well.

Add mixture of flour and add-ins cheddar cheese, stir well.

Pour into baking pan, sprinkle with another 50 grams of cheddar cheese, 
bake in hot oven 180 C for 45 minutes until cooked.

Hainanese Chicken Rice

 Prima Taste Hainanese Chicken Rice....






I don't have my SLR with me today so...above pic a capture from Iphone....(cant wait for iPhone 5)
The package as you can see above does have a complete set for chicken rice,they even gave the sauce chilly, & ginger , so all you need is rice and whole chicken.

I add a fried garlic on top of the chicken and use some of the chicken stock for the soup, add more water and lil seasoning & spring onion..and there you have it a nice hainanese chicken rice

Weekend always feel so short :( tomorrow back to MONDAYY....
well at least I have a yummy lunch...
